
Mater convolvulus (空心菜), the beautiful vegetable with a terrible English name, is a wonderful edible item. Lightly touched to the hot iron with a bit of garlic and uncut scallions, and this crunchy yet pungent veggie makes your mouth happy, your stomach full, and is light on calories too.



This is found in asian markets as “Tung Choi” and a better English name for it is “Water Spinach”. Search google for water spinach and you will see.
