{"id":39,"date":"2004-09-20T15:18:06","date_gmt":"2004-09-20T19:18:06","guid":{"rendered":"http:\/\/blogs.law.harvard.edu\/jith\/recipe-vegetable-manchurian\/"},"modified":"2004-09-20T15:18:06","modified_gmt":"2004-09-20T19:18:06","slug":"recipe-vegetable-manchurian","status":"publish","type":"page","link":"https:\/\/archive.blogs.harvard.edu\/jith\/recipe-vegetable-manchurian\/","title":{"rendered":"Recipe: Vegetable Manchurian"},"content":{"rendered":"<p><a name='a116'><\/a><\/p>\n<p><P><STRONG>Serves 5<\/STRONG><\/P><br \/>\n<P><STRONG>[with thanks to Tarla, Nita, and Daisy]<\/STRONG><\/P><br \/>\n<P><B><U>Ingredients for the vegetable balls:<\/U><\/B><\/P><br \/>\n<UL><br \/>\n<LI><U><\/U><STRONG>4 cups cabbage, chopped fine<\/STRONG><br \/>\n<LI><STRONG>2 cups cauliflower, chopped fine<\/STRONG><br \/>\n<LI><STRONG>2 cups carrot, chopped fine<\/STRONG><br \/>\n<LI><STRONG>2\/3 cups onion, chopped fine<\/STRONG><br \/>\n<LI><STRONG>7 cloves garlic, chopped fine<\/STRONG><br \/>\n<LI><STRONG>2 green chilies, chopped fine<\/STRONG><br \/>\n<LI><STRONG>4 Tbsp corn flour&nbsp; [I used masa harina]<\/STRONG><br \/>\n<LI><STRONG>10 tablespoons white wheat flour<\/STRONG><br \/>\n<LI><STRONG>2 eggs<\/STRONG><br \/>\n<LI><STRONG>Salt and pepper to taste<\/STRONG><br \/>\n<LI><STRONG>Frying oil<\/STRONG><\/LI><\/UL><br \/>\n<P><B><U>Preparing the vegetable balls:<\/U><\/B><\/P><br \/>\n<OL><br \/>\n<LI><B>Mix all the ingredients (except the frying oil) in a bowl<\/B><br \/>\n<LI><B>Make ping pong ball-sized clumps out of the mixture<\/B><br \/>\n<LI><B>Deep fry until golden brown<\/B><br \/>\n<LI><B>Drain on paper towels and set aside<\/B><\/LI><\/OL><br \/>\n<P><STRONG><U>Ingredients for the sauce:<\/U><\/STRONG><\/P><br \/>\n<UL><br \/>\n<LI><STRONG>2 Tbsp garlic, chopped fine<\/STRONG><br \/>\n<LI><STRONG>4 tsp green chilies, chopped fine<\/STRONG><br \/>\n<LI><STRONG>4 tsp ginger, chopped fine<\/STRONG><br \/>\n<LI><STRONG>3-4 green onions, chopped fine<\/STRONG><br \/>\n<LI><STRONG>1\/3 cup onion, chopped fine<\/STRONG><br \/>\n<LI><STRONG>3 Tbsp soy sauce<\/STRONG><br \/>\n<LI><STRONG>2 Tbsp corn flour mixed with 2 cups water<\/STRONG><br \/>\n<LI><STRONG>2 cups vegetable stock or water<\/STRONG><br \/>\n<LI><STRONG>1 Tbsp sugar<\/STRONG><br \/>\n<LI><STRONG>4 Tbsp oil<\/STRONG><br \/>\n<LI><STRONG>Salt to taste<\/STRONG><br \/>\n<LI><STRONG>Orange juice<\/STRONG><\/LI><\/UL><br \/>\n<P><STRONG><U>Preparing the sauce:<\/U><\/STRONG><\/P><br \/>\n<OL><br \/>\n<LI><STRONG>Heat oil in a wok or saucepan<\/STRONG><br \/>\n<LI><STRONG>Stir fry garlic, green chilies, green onions, and onions<\/STRONG><br \/>\n<LI><STRONG>Add remaining ingredients (except the orange juice) and simmer for a few minutes<\/STRONG><br \/>\n<LI><STRONG>Taste the sauce.
