(updated)"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.producepedia.com\/images\/commodity\/broccoli.jpg\" alt=\"\" width=\"88\" height=\"88\" \/> ..\u00a0 <em>W<\/em>hile all the web pundits are yakking about tomorrow&#8217;s Presidential Election, Prof. Yabut wants me to deal with a more personal issue that has been giving him agita for even longer than this interminable political campaign:<\/p>\n<p style=\"padding-left: 60px\"><em>The constant misting (spritzing) of produce in America&#8217;s supermarkets seems to reduce their at-home &#8220;shelf-life&#8221; by making them rot, mold, discolor, lose flavor, and go limp, far more quickly than if they were sold in dry bins.\u00a0 The misting is done to make them <\/em>appear <em>more fresh at the store (and to replace moisture that is naturally lost after being picked and reduces the size and weight of the items). <\/em><\/p>\n<p>Whether it&#8217;s broccoli, green beans, bell peppers, or leafy veggies, my friends and relatives from several generations have all noticed that dry (unmisted)  produce stays fresh and usable longer at home than misted produce.\u00a0 Nonetheless, about 90 percent of retailers now use automated misting systems.\u00a0 (see &#8220;<a href=\"http:\/\/findarticles.com\/p\/articles\/mi_m0BPE\/is_\/ai_63992735\">Produce in the mist<\/a>,&#8221;<em> Store Equipment &amp; Design<\/em>, by John Frank, July 2000) The quick demise of misted vegetables is an expensive waste.<\/p>\n<p><a href=\"http:\/\/blogs.law.harvard.edu\/ethicalesq\/files\/2008\/11\/showheadf.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-10239\" src=\"http:\/\/blogs.law.harvard.edu\/ethicalesq\/files\/2008\/11\/showheadf.jpg\" alt=\"\" width=\"42\" height=\"60\" \/><\/a> The misting increases the cost of items sold by the pound, while forcing customers to waste time and paper towels attempting to dry the produce before refrigerating them.\u00a0 And, water sitting around in the display bins is a great place for bacteria to thrive.<\/p>\n<p style=\"padding-left: 30px\">At my local market, which is part of the <a href=\"http:\/\/www.pricechopper.com\/\">Price Chopper<\/a> chain, you need to don a slicker or bring an umbrella to keep from being soaked by the incessant, high-volume spritzing.<\/p>\n<p style=\"padding-left: 60px\">shopping for sweet corn \u2013<br \/>\nthe attractive stranger<br \/>\nis very choosy<\/p>\n<p style=\"text-align: right\"><a href=\"http:\/\/blogs.law.harvard.edu\/ethicalesq\/files\/2008\/11\/lefthdr_620x95.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-10238\" src=\"http:\/\/blogs.law.harvard.edu\/ethicalesq\/files\/2008\/11\/lefthdr_620x95.jpg\" alt=\"\" width=\"77\" height=\"36\" \/><\/a> <strong><em> stop drowning our green beans!<\/em><\/strong> <img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.producepedia.com\/images\/commodity\/green_beans.jpg\" alt=\"\" width=\"72\" height=\"72\" \/><\/p>\n<p style=\"padding-left: 60px\">the grocery bag spills \u2013<br \/>\nblueberries . . . r\u00a0 o\u00a0 l\u00a0 l<br \/>\nbananas don\u2019t<\/p>\n<p style=\"padding-left: 60px\">&#8230;.. by <em>dagosan<\/em><\/p>\n<p>At a farmer&#8217;s market yesterday, I was told by a 5th-generation vegetable farmer whose large, firm, broccoli I was admiring, that she has to take special care this time of year to make sure the frost has evaporated from the inside of the bunches before being picked.\u00a0 Similarly, websites that give advice on caring for purchased vegetables and them keeping fresh (like <a href=\"http:\/\/www.ehow.com\/how_2049667_keep-vegetables-fresh.html\">here<\/a> and <a href=\"http:\/\/www.vegetableexpert.co.uk\/RefrigerationAndColdStorage.html\">there<\/a>) warn not to wash vegetables until you are going to use them; and others suggest placing a paper towel with vegetables in plastic bags, &#8220;to absorb excess moisture and retain freshness.&#8221;<\/p>\n<p>Such advice seems to confirm my suspicions that excess moisture kills vegetables and store-spritzed veggies have a shorter life expectancy.<\/p>\n<p style=\"padding-left: 30px\">[But see, this study, &#8220;<a href=\"http:\/\/cat.inist.fr\/?aModele=afficheN&amp;cpsidt=4919252\">Cold water mist humidification to preserve the quality of fresh vegetables during retail sale<\/a>.&#8221; I don&#8217;t know whether the observed freshness &#8220;during retail sale&#8221; continues once brought home by the consumer.\u00a0 Similarly, I have no idea what <a href=\"http:\/\/www3.interscience.wiley.com\/journal\/119368327\/abstract\">these conclusions<\/a> &#8220;on Ascorbic Acid Retention in Broccoli During Cabinet Display&#8221; Neither of those reasons seems to justify shortening their &#8220;shelf-life&#8221; once we get them home.<\/p>\n<p style=\"padding-left: 60px\">I&#8217;ve found many sources on keeping vegetable that advise not washing them before storing them, as well as putting a paper towel with some vegetable to help absorb the extra moisture.<\/p>\n<p style=\"padding-left: 60px\">Do you have studies on this subject that would rebut our negative experience with misted vegetables?<\/p>\n<p style=\"padding-left: 30px\"><img decoding=\"async\" src=\"http:\/\/blogs.law.harvard.edu\/ethicalesq\/files\/2008\/07\/thumbdown.gif\" alt=\"\" \/><em><strong> update <\/strong><\/em>(Nov. 7, 2008):\u00a0 This afternoon, I received a rather unsatisfactory Consumer Response  to the above Complaint from Price Chopper.\u00a0 To be fair to them, I&#8217;m going to post their entire email reply in &#8220;Case ID: 166757&#8221;:<\/p>\n<p style=\"padding-left: 60px\">November 6, 2008<\/p>\n<p style=\"padding-left: 60px\">Dear Mr. Giacalone,<\/p>\n<p style=\"padding-left: 60px\">Thank you for your recent email.\u00a0 It is always helpful to hear our customers&#8217; concerns, and to be given a chance to respond to them.<\/p>\n<p style=\"padding-left: 60px\">Your comments regarding produce misting have been forwarded to our corporate produce office for review and advisement.\u00a0 We have been informed that we mist our produce to keep it fresh.\u00a0 If our produce isn&#8217;t moistened it tends to dry out and decay much faster.\u00a0 This is a common practice and has already been proven, so further testing is not necessary.\u00a0 Your feedback on this matter is appreciated.<\/p>\n<p style=\"padding-left: 60px\">Thank you for giving us the opportunity to address your concerns.\u00a0 It is our intent to provide excellence in all areas of service to our customers.\u00a0 Your patronage and your comments are very important to us.\u00a0 Please feel free to contact us at 1-800-666-7667 (option 3), Monday through Friday, 8:30 am to 5pm, or on our website at www.pricechopper.com.<\/p>\n<p>Sincerely,<\/p>\n<p>Maureen E.
